Roasting the Turkey
Preheat the oven to 375°F (190°C). Rub the dark meat turkey with olive oil, salt, black pepper, garlic powder, and onion powder. Place in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).

Making the Stuffing
In a large skillet, sauté chopped onion and celery in a little olive oil until soft. In a large bowl, combine bread cubes, sautéed vegetables, dried sage, thyme, salt, and pepper. Gradually add chicken broth until the mixture is moist but not soggy. Place in a baking dish and bake alongside the turkey for the last 30 minutes of cooking.

Cooking Candied Carrots
In a saucepan, combine sliced carrots, brown sugar, butter, and a pinch of salt. Cook over medium heat until the carrots are tender and glazed, about 15-20 minutes.
