    Prepare the Potatoes

    Peel and cut the potatoes into evenly sized cubes. In a pot of boiling salted water, cook the potatoes for about 10 minutes until tender but still firm. Drain and set aside.

    Sear the Pork Chops

    Season the pork chops with salt and black pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until a golden brown crust forms. Remove from skillet and set aside.

    Cook the Peppers

    In the same skillet, add the remaining olive oil and sauté minced garlic, red, and green bell peppers until tender, about 5-7 minutes.

    Combine and Finish Cooking

    Return the pork chops to the skillet with the peppers. Add the chicken broth and fresh rosemary. Cover and cook for an additional 10-15 minutes, or until the pork chops are cooked through.

    Fry the Potatoes

    In a separate pan, heat some oil and fry the pre-cooked potatoes until they are golden and crispy. Season with salt.

    Plate the pork chops with the sautéed peppers and fried potatoes. Drizzle with pan jus from the skillet and garnish with additional rosemary if desired.
