Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water, stirring occasionally until smooth. Remove from heat and let cool slightly.
- 3
Mix Eggs and Sugar
In another bowl, whisk together the eggs, egg yolk, granulated sugar, and vanilla extract until the mixture is pale and slightly thickened.
- 4
Combine Mixtures
Gradually add the melted chocolate mixture to the egg mixture, stirring until fully combined. Sift in the cocoa powder and salt, then gently fold until just incorporated.
- 5
Bake
Divide the batter evenly among the prepared ramekins. Place them on a baking tray and bake for 12-14 minutes, until the edges are set but the center remains soft.
- 6
Serve
Remove from the oven and let sit for 1 minute. Carefully invert each ramekin onto a plate, allowing the cake to gently release. Serve immediately, optionally with vanilla ice cream or whipped cream.
