Cooking Instructions
- 1
Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
- 2
Dredge the Chicken
In a shallow dish, combine the flour, salt, and pepper. In another shallow dish, beat the eggs and mix in the grated Parmesan cheese. Dredge each chicken breast in the flour, shaking off the excess, then dip into the egg mixture, ensuring it is fully coated.
- 3
Cook the Chicken
In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat. Once hot, add the chicken breasts and cook until golden brown, about 3-4 minutes per side. Remove the chicken and set aside.
- 4
Make the Sauce
In the same skillet, add the chicken broth, lemon juice, and remaining butter. Bring to a simmer and return the chicken to the skillet. Cook for an additional 3-5 minutes, allowing the sauce to thicken slightly.
