Prepare the Garlic
Preheat your oven to 400°F (200°C). Slice the tops off the garlic cloves and drizzle with a bit of olive oil. Wrap in aluminum foil and roast for about 30 minutes until soft and caramelized.

Cook the Pasta
In a large pot, bring salted water to a boil. Add the angel hair pasta and cook according to package instructions until al dente, usually about 3-4 minutes. Drain and reserve a cup of pasta water.

Make the Aglio Olio Sauce
In a large skillet, heat the extra virgin olive oil over medium heat. Squeeze the roasted garlic into the skillet, discarding the skins. Mash the garlic with a wooden spoon and stir in the red pepper flakes.

Combine Pasta and Sauce
Add the drained pasta to the skillet and toss to combine. If the pasta seems dry, add a bit of the reserved pasta water. Season with salt and black pepper to taste.

Serve
Plate the pasta and garnish with fresh chopped parsley. Serve immediately.
