Make the Dough
In a large bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in egg yolks and white wine until the dough comes together. Knead gently on a floured surface until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll and Cut the Dough
After chilling, roll out the dough to about 1/8 inch thickness. Use a round cutter to cut out circles, approximately 4 inches in diameter.

Shape the Shells
Wrap each circle around a cannoli tube, sealing the edges with a bit of water. Make sure to press firmly to hold the shape.

Fry the Shells
In a deep fryer or heavy pot, heat vegetable oil to 375°F (190°C). Fry the cannoli shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool slightly before removing from tubes.
