Prepare the Filling

    Cook the Sausage

    In a large skillet, heat olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a spoon.

    Add Broccoli Rabe

    Add the minced garlic and chopped broccoli rabe to the skillet. Sauté until the broccoli rabe is tender, about 5-7 minutes.

    Mix in Beans

    Stir in the white beans, salt, and pepper. Cook for an additional 2-3 minutes. Remove from heat and let cool.

Make the Dough

    Combine Ingredients

    In a mixing bowl, combine the flour and salt. Gradually add water and mix until a dough forms.

    Knead the Dough

    Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.

Prepare the Pomodoro Sauce

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes, salt, sugar, basil, and pepper. Simmer for 20 minutes.

Assemble and Fry Dumplings

    Roll out the Dough

    Roll out the rested dough on a floured surface to about 1/8 inch thick. Cut into circles using a cookie cutter or glass.

    Fill the Dumplings

    Place about a tablespoon of the filling in the center of each circle. Fold the dough over to create a half-moon shape and press the edges to seal.

    Heat the Oil

    In a deep skillet, heat vegetable oil over medium-high heat until hot.

    Fry the Dumplings

    Carefully add dumplings to the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
