Preparation Steps

  1. 1

    Prepare the Beef Tenderloin

Preheat your oven to 400°F (200°C). Season the beef tenderloin with salt, black pepper, and fresh rosemary on all sides. Heat olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned (about 3-4 minutes per side).

  2. 2

    Roast the Beef

Transfer the seared beef tenderloin to a roasting pan and place it in the preheated oven. Roast for about 25-30 minutes for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy.

  3. 3

    Prepare the Strawberry Champagne Demi-Glaze

While the beef is roasting, combine the strawberry jam and champagne in a saucepan over medium heat. Add minced garlic and bring to a simmer. Reduce the mixture until it thickens slightly (about 10-15 minutes), stirring occasionally.

  4. 4

    Add Sopressata and Mozzarella

Once the beef reaches your desired doneness, remove it from the oven. Layer the sopressata slices over the beef, followed by the mozzarella cheese. Return to the oven for an additional 5-7 minutes until the cheese is melted and bubbly.

  5. 5

    Serve

Slice the beef tenderloin and serve it drizzled with the strawberry champagne demi-glaze.
