Prepare the Short Ribs
Preheat your oven to 325°F (160°C). Season the short ribs generously with salt and black pepper.

Add Tomato Paste and Wine
Stir in the tomato paste and cook for 2 minutes. Pour in the Barolo wine and bring it to a simmer, scraping the bottom of the pot to release any browned bits.

Combine Ingredients
Return the seared short ribs back to the pot. Add the beef broth, thyme, and bay leaves. The liquid should cover the ribs about three-quarters of the way.

Remove the pot from the oven and carefully take out the ribs. Let them rest for a few minutes. Serve the short ribs with the braising liquid spooned over the top.
