Crème Brulee Preparation

Prepare the Cream
In a saucepan, heat the heavy cream and sugar over medium heat until the sugar dissolves and the mixture is warm. Scrape the seeds from the vanilla bean and add both the seeds and the pod to the cream.

Combine with White Chocolate
Return the mixture to the saucepan and add the chopped white chocolate. Stir over low heat until the chocolate melts and the mixture thickens slightly.

Bake
Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins. Bake at 325°F (160°C) for 30-35 minutes until set. Chill in the refrigerator.

Sauté Apples
In a skillet, melt the butter over medium heat. Add the sliced apples, brown sugar, cinnamon, and lemon juice. Sauté until the apples are tender and caramelized, about 5-7 minutes.
Cinnamon Crumb Topping

Make the Crumb Topping
In a bowl, combine flour, brown sugar, cinnamon, and softened butter. Mix until crumbly.

Bake Topping
Spread the crumb topping over the sautéed apples and bake at 350°F (175°C) for 10-12 minutes until golden brown.
Assembly

Assemble the Tart
Layer the sautéed apples over the chilled Crème Brulee. Top with the cinnamon crumb topping.

Serve
Serve warm with scoops of French vanilla ice cream on the side.
