Method

Steak Preparation

    Prepare the Steak

    Season the butcher's cut steak with salt and cracked black peppercorns on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from pan and let rest.

Mushroom Sauce Preparation

    Cook the Mushrooms and Shallots

    In the same skillet used for the steak, melt butter over medium heat. Add chopped shallots and cook until translucent, about 2 minutes. Add sliced baby Bella mushrooms and sauté until they are browned and soft, about 5 minutes.

    Add Brandy and Cream

    Carefully add the brandy to the pan and allow it to reduce for about 2-3 minutes. Then, stir in the heavy cream and let simmer until the sauce thickens, about 5 minutes. Season with salt and pepper to taste.

Polenta Preparation

    Boil Water

    In a large saucepan, bring 4 cups of water and 1 tsp of salt to a boil.

    Add Cornmeal

    Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Cook over medium-low heat, stirring frequently, until thickened, about 10-15 minutes.

    Finish the Polenta

    Remove from heat and stir in the Parmesan cheese until melted and creamy. Adjust seasoning with additional salt if necessary.

Vegetable Preparation

    Prepare the Vegetables

    Trim the asparagus and peel and slice the carrots.

    Sauté the Vegetables

    In a separate skillet, heat extra virgin olive oil over medium heat. Add the asparagus and carrots, season with salt and pepper, and sauté until tender, about 5-7 minutes.
