Steak Preparation

Prepare the Steak
Season the butcher's cut steak with salt and cracked black peppercorns on both sides.

Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steaks and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached. Remove from pan and let rest.

Add Brandy and Cream
Carefully add the brandy to the pan and allow it to reduce for about 2-3 minutes. Then, stir in the heavy cream and let simmer until the sauce thickens, about 5 minutes. Season with salt and pepper to taste.
Polenta Preparation

Boil Water
In a large saucepan, bring 4 cups of water and 1 tsp of salt to a boil.

Add Cornmeal
Gradually whisk in the cornmeal, stirring constantly to prevent lumps. Cook over medium-low heat, stirring frequently, until thickened, about 10-15 minutes.

Finish the Polenta
Remove from heat and stir in the Parmesan cheese until melted and creamy. Adjust seasoning with additional salt if necessary.
