Preparation

    Boil Water

    Bring a large pot of salted water to a boil for cooking the spaghetti.

    In a separate bowl, combine the shrimp and calamari. Season them lightly with salt and black pepper.

Cooking Pasta

    Cook Spaghetti

    Add the spaghetti to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Once cooked, drain the spaghetti and set aside, reserving a cup of pasta water.

Making the Scampi Sauce

    Heat Olive Oil and Butter

    In a large skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.

    Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Stir in the diced tomatoes and cook for another 3-4 minutes until they soften.

    Pour in the white wine and lemon juice. Bring the mixture to a simmer and let it cook for about 5 minutes to reduce slightly.

    Add the seasoned shrimp and calamari, cooking for about 3-4 minutes until the shrimp turn pink and the calamari are tender.

    If the sauce is too thick, add some reserved pasta water to reach the desired consistency.

    Stir in the remaining butter and chopped parsley, mixing well.

Combining

    Combine Spaghetti with Sauce

    Add the cooked spaghetti to the sauce in the skillet, tossing everything together until the pasta is well coated with the sauce.

    Serve immediately, garnishing with additional parsley if desired.
