Method

Preparation of Octopus

    Boil the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 45-60 minutes until tender. Remove from water and let it cool.

    Prepare Marinade

    In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Once the octopus has cooled, cut it into pieces and marinate in this mixture for at least 30 minutes.

Preparation of Vegetables

    Boil Potatoes

    In a separate pot, boil the medium-sized potatoes for about 15-20 minutes until fork-tender. Drain and let them cool before cutting them into halves or quarters.

    Roast Peppers

    Preheat the oven to 200°C (400°F). Cut the red bell peppers in half, remove seeds, and place them on a baking tray. Drizzle with olive oil and roast for 20-25 minutes until skin is blistered. Remove from oven and peel the skin off.

    Sauté Mushrooms

    In a pan, heat a tablespoon of olive oil over medium heat. Add sliced baby bella mushrooms and sauté for 5-7 minutes until golden brown. Season with a pinch of salt and pepper.

Grilling and Serving

    Grill the Octopus

    Preheat a grill to medium-high heat. Grill the marinated octopus pieces for about 3-4 minutes per side until charred and heated through.

    Combine and Serve

    On a large serving platter, arrange the grilled octopus, boiled potatoes, sautéed mushrooms, and roasted peppers. Drizzle with pomodoro sauce and sprinkle with fresh parsley before serving.

    Optionally, sprinkle cooked chickpeas over the dish for added texture and flavor.
