Method
Preparing the Salad Base

Wash and Prepare Greens
Rinse the Romaine and mixed lettuces under cold water. Tear them into bite-sized pieces and place them in a large salad bowl.

Add Ceci and Soffritto
Add the chickpeas and soffritto to the bowl with the greens. Toss gently to combine.

Prepare Tomatoes and Mozzarella
Dice the tomato and add it to the salad. Tear the mozzarella into small pieces and sprinkle over the top.
Frying the Calamari

Prepare the Calamari
In a bowl, combine the flour, cornstarch, salt, and black pepper. Dredge the calamari rings in the mixture until fully coated.

Heat Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the calamari in batches for about 2-3 minutes or until they are golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
Making the Dressing

Blend Ingredients
In a blender, combine the anchovy paste, grated Parmesan cheese, olive oil, lemon juice, minced garlic, salt, and black pepper. Blend until smooth and creamy.

Taste and Adjust Seasoning
Taste the dressing and adjust the seasoning with more salt and pepper if necessary.
Assembling the Dish

Combine Salad and Dressing
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.

Top with Calamari
Place the fried calamari on top of the dressed salad. Serve immediately.
