Pasta Preparation
- 1
Cook the Fettuccini
In a large pot, bring salted water to a boil. Add the fettuccini and cook according to package instructions until al dente, usually around 8-10 minutes.
- 2
Drain the Pasta
Once the pasta is cooked, reserve 1 cup of the pasta water and then drain the fettuccini in a colander.
Sauce Preparation
- 3
Sauté Garlic
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
- 4
Add Cream and Lemon Juice
Pour in the heavy cream and fresh lemon juice, stirring well to combine. Bring the mixture to a gentle simmer.
- 5
Incorporate Cheese
Gradually add the grated Parmesan cheese to the skillet, stirring until melted and creamy. If the sauce becomes too thick, add a little reserved pasta water to reach desired consistency.
- 6
Season the Sauce
Season the sauce with black pepper and salt to taste. Stir well to combine all flavors.
Combine and Serve
- 7
Combine Pasta and Sauce
Add the drained fettuccini to the skillet with the sauce. Toss to coat the pasta evenly with the sauce. If needed, add more reserved pasta water for a silkier texture.
- 8
Garnish and Serve
Plate the fettuccini and garnish with lemon zest and chopped parsley. Serve immediately while hot.
