Pasta Preparation

Cook Bucatini
Bring a large pot of salted water to a boil. Add bucatini pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Sauté Sausage
In a large skillet over medium heat, add olive oil. Once hot, add the house made sausage. Break it apart with a spoon and cook until browned and cooked through, about 5-7 minutes.

Add Aromatics
Stir in minced garlic and red chili flakes, cooking for an additional 1-2 minutes until fragrant.

Incorporate Tomatoes
Add the canned crushed tomatoes to the skillet. Stir to combine and bring to a simmer. Reduce heat and let simmer for about 15 minutes, stirring occasionally.

Season Sauce
Taste the sauce and season with salt and freshly ground black pepper to your liking.
Combine and Serve

Combine Pasta and Sauce
Add the drained bucatini to the sauce in the skillet. Toss to coat the pasta in the sauce, adding reserved pasta water a little at a time to reach desired consistency.

Plate the pasta and top with grated Romano cheese. Serve immediately.
