Preparation of Noodles

Cook Lasagna Noodles
Boil a large pot of salted water. Add lasagna noodles and cook according to package instructions until al dente. Drain and set aside.
Bolognese Sauce Preparation

Make Bolognese Sauce
In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until vegetables are softened, about 5 minutes.

Add Ground Beef
Increase heat to medium-high and add ground beef. Cook until browned, breaking it up with a spoon, about 8 minutes.

Add Tomatoes and Seasoning
Stir in crushed tomatoes, tomato paste, Italian seasoning, salt, and pepper. Reduce heat to low and simmer for 30 minutes.
Vegetable Filling Preparation

Prepare Veggie Filling
In a skillet, sauté zucchini and mushrooms in a bit of olive oil for about 5 minutes. Add fresh spinach and cook until wilted. Remove from heat and let cool.

Mix Ricotta Filling
In a bowl, combine ricotta cheese, egg, and salt. Mix until smooth.

Layer the Lasagna
In a baking dish, spread a thin layer of Bolognese sauce or veggie filling. Layer 4 noodles over the sauce, spread half of the ricotta mixture, top with half of the sautéed veggies or half of the Bolognese sauce, and sprinkle with mozzarella cheese.

Repeat Layers
Repeat the layering process until all ingredients are used, finishing with a layer of noodles topped with remaining sauce and mozzarella cheese.

Bake the Lasagna
Preheat oven to 180°C (350°F). Cover the baking dish with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 15 minutes, until cheese is bubbly and golden.
