Pasta Preparation

Cook the Pasta
Bring a large pot of salted water to a boil. Add the spaghetti or paccheri and cook according to package instructions until al dente. Once cooked, reserve a cup of pasta water and drain the rest. Set aside.

Sauté the Vegetables
In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion, carrot, and celery. Sauté for about 5–7 minutes until the vegetables are softened.

Cook the Beef
Increase the heat to medium-high and add the ground beef to the pan. Cook until browned, about 8-10 minutes, breaking it apart with a spoon.

Deglaze with Wine
Pour in the Chianti wine and let it simmer for about 5 minutes, allowing the alcohol to evaporate and the flavors to meld.

Add Tomatoes and Seasonings
Stir in the canned diced tomatoes, salt, black pepper, and dried oregano. Reduce the heat to low, cover, and let simmer for at least 30 minutes, stirring occasionally. If the sauce thickens too much, add a bit of reserved pasta water to loosen it.
Serving

Combine and Serve
Once the sauce is ready, toss the cooked pasta with the Bolognese sauce in the skillet until well coated. Serve hot, topped with freshly grated Pecorino cheese.
