Risotto Preparation

    Cook the Aromatics

    In a large saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

    Cook the Rice

    Stir in the Arborio rice and cook for 2-3 minutes until the rice is lightly toasted. Gradually add the vegetable broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue this process until the rice is creamy and al dente, about 18-20 minutes.

    Add Vegetables

    Once the rice is cooked, stir in the diced mushrooms and frozen peas. Season with salt and black pepper. Remove from heat and fold in the grated Parmesan cheese. Allow to cool completely.

Arancini Assembly

    Form the Arancini

    Once the risotto is cool, take about 2 tablespoons of the risotto mixture in your hand. Flatten it slightly and place a cube of mozzarella cheese in the center. Mold the rice around the cheese to form a ball, ensuring that the cheese is completely enclosed. Repeat with the remaining risotto.

    Bread the Arancini

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with bread crumbs. Roll each risotto ball in flour, dip in the egg, and then coat with bread crumbs.

    Fry the Arancini

    In a deep pot, heat vegetable oil to 350°F (175°C). Fry the arancini in batches until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

    Cook the Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Pour in the canned crushed tomatoes, season with salt and oregano, and let simmer for 15-20 minutes. Stir in fresh basil before serving.
