1. Prepare the Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
3. Prepare the Filling
Sauté the spinach in olive oil until wilted. Let it cool, then mix with buffalo mozzarella (cubed) and a pinch of salt.
4. Roll Out the Dough
Divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.
5. Fill and Shape Ravioli
Place small spoonfuls of the filling on one sheet. Moisten the edges with water, then place another sheet on top and press to seal.
6. Cook the Ravioli
Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes until they float. Remove and drain.
