    Prepare the Chicken

    Pound the chicken breasts to an even thickness. Season both sides with salt and pepper.

    Breading the Chicken

    Set up a breading station: Place flour in one dish, beaten eggs in another, and breadcrumbs mixed with grated Grana Padano in a third. Dredge each chicken breast in flour, dip into the eggs, and then coat with the breadcrumb mixture.

    Fry the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the breaded chicken breasts. Fry for about 4-5 minutes per side, until golden brown and cooked through. Remove and let drain on paper towels.

    Prepare the Lemon Citronnette

    In a small bowl, whisk together lemon juice, Dijon mustard, salt, and pepper. Slowly drizzle in olive oil while whisking until emulsified.

    Assemble the Dish

    On a plate, place a generous handful of mixed greens and top with halved cherry tomatoes. Slice the fried chicken and place on top. Drizzle with lemon citronnette and additional grated Grana Padano.
