    Prepare the Slaw

    In a large bowl, combine slaw mix, mayonnaise, vinegar, and sugar. Mix well and set aside to chill.

    Prepare the Shrimp

    In a bowl, whisk together eggs and milk. In another bowl, mix flour, cornmeal, Cajun seasoning, salt, and black pepper. Dip each shrimp in the egg mixture, then coat with the flour mixture.

    Fry the Shrimp

    In a large skillet, heat vegetable oil over medium-high heat. Fry the coated shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Drain on paper towels.

    Assemble the PoBoy

    Slice the French bread lengthwise. Layer with lettuce, fried shrimp, tomato slices, and pickles. Top with slaw.

    Serve

    Serve the Shrimp PoBoy with pub fries on the side.
