    Prepare the Batter

    In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

    Soak the Brioche

    Dip each slice of brioche bread into the egg mixture, allowing it to soak for a few seconds on each side.

    Cook the French Toast

    In a large skillet, melt 1 tablespoon of butter over medium heat. Add the soaked brioche slices and cook until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.

    Caramelize the Bananas

    In the same skillet, add the remaining butter and brown sugar. Stir until the sugar melts and begins to bubble. Slice the bananas and add them to the skillet, cooking for about 2 minutes until they are caramelized.

    Assemble the Dish

    Place the French toast on plates, top with the caramelized bananas, and drizzle with the remaining sauce from the skillet. Add whipped cream on top and serve with a scoop of ice cream if desired.
