    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the Baldwin County grits and a pinch of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until thickened and creamy. Stir in 2 tablespoons of butter and set aside.

    Cook the Shrimp

    In a large skillet, melt the remaining 2 tablespoons of butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the shrimp to the skillet, sprinkle with creole seasoning, salt, and black pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.

    Make the Cream Sauce

    Pour the heavy cream into the skillet with the shrimp. Stir in lemon juice and simmer for an additional 2-3 minutes until the sauce thickens slightly. Add sliced green onions and mix well.

    Serve

    To serve, place a generous scoop of grits on each plate, top with the shrimp and creole cream sauce. Garnish with additional green onions if desired.
