Oyster PoBoy

Preparation

    Prepare the oysters

    Rinse the oysters under cold water and pat them dry with a paper towel.

    Make the batter

    In a bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper. In another bowl, whisk together milk and egg. Dip each oyster in the milk mixture, then coat in the cornmeal mixture.

    Fry the oysters

    Heat vegetable oil in a deep pan over medium-high heat. Once hot, fry the oysters in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.

    Assemble the PoBoy

    Slice the French bread horizontally and layer with lettuce, fried oysters, and slices of tomato. Top with coleslaw.

    Serve

    Serve the PoBoy with a side of pub fries.
