    Prepare the Mahi Mahi

    In a small bowl, mix the paprika, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture onto both sides of the Mahi Mahi fillets.

    Grill or Blacken the Fish

    Heat olive oil in a grill pan or skillet over medium-high heat. Once hot, add the Mahi Mahi fillets and cook for 4-5 minutes on each side until cooked through and flaky. Remove from heat and let rest.

    Make Whipped Potatoes

    Peel and chop the potatoes, then boil them in salted water until tender (about 15-20 minutes). Drain and return to the pot. Add butter and milk, then mash until creamy and smooth. Season with salt to taste.

    Prepare Broccoli or Brussels Sprouts

    Steam the broccoli or Brussels sprouts in a steamer basket over boiling water for about 5-7 minutes until tender. Season with salt and pepper to taste.

    Serve

    Plate the grilled or blackened Mahi Mahi alongside a generous portion of whipped potatoes and steamed broccoli or Brussels sprouts.
