    Prep the Vegetables

    Chop the bell peppers and onion into thin slices.

    Cook the Sirloin

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped sirloin, season with salt and black pepper, and cook until browned, about 5-7 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the chopped bell peppers and onion. Sauté until the vegetables are tender, about 4-5 minutes.

    Combine Ingredients

    Return the cooked sirloin to the skillet with the sautéed vegetables. Mix well and cook together for another 2-3 minutes.

    Assemble the Sandwiches

    Slice the PoBoy bread lengthwise. Place the sirloin and vegetable mixture inside the bread. Top with Monterey Jack cheese.

    Grill the Sandwiches

    Heat a grill or panini press over medium heat. Grill the sandwiches for 3-5 minutes on each side, or until the cheese is melted and the bread is crispy.

    Slice the sandwiches in half and serve hot.
