    Prepare the Hollandaise Sauce

    In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice until thickened. Gradually whisk in the melted butter until the sauce is smooth and creamy. Season with salt, black pepper, and set aside.

    Poach the Eggs

    In a saucepan, bring water to a gentle simmer. Crack each egg into a small bowl and gently slide it into the water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and set aside.

    Toast the English Muffins

    Slice the English muffins in half and toast them until golden brown.

    Assemble the Dish

    On each toasted English muffin half, layer a slice of honey ham, followed by a poached egg. Drizzle the prepared hollandaise sauce over the top and sprinkle with paprika.

    Serve

    Serve immediately with a side of pub fries or Baldwin County grits.
