Crispy Chicharrones
Method
Preparation and Cooking
- 1
Prepare the Pork Skin
Start by cutting the pork skin into bite-sized pieces. Make sure to remove any excess fat.
- 2
Fry the Pork Skins
Heat the vegetable oil in a deep pot to 350°F (175°C). Carefully add the pork skin pieces in batches, frying until they puff up and turn golden brown, about 3-5 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt immediately.
- 3
Make the Honey Red Pepper Reduction
In a small saucepan, combine honey and red pepper flakes. Heat over medium-low heat until it starts to simmer. Reduce the heat and let it simmer gently for about 5-10 minutes, or until slightly thickened. Stir occasionally.
- 4
Serve
Drizzle the honey red pepper reduction over the crispy chicharrones before serving, or serve it on the side for dipping.
