Cooking Instructions

  1. 1

    Prepare the Chicken

Rub the jerk seasoning all over the boneless chicken breasts. Let it marinate for at least 30 minutes for better flavor.

  2. 2

    Cook the Chicken

Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking. Grill the chicken for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C). Remove from grill and let rest.

  3. 3

    Make the Mashed Potatoes

While the chicken is cooking, peel and chop the red potatoes. Boil in salted water until tender, about 15-20 minutes. Drain the potatoes, then return to the pot. Add butter and milk, and mash until smooth. Season with salt and pepper to taste.

  4. 4

    Steam the Broccoli

In a steamer or microwave-safe bowl, steam the broccoli florets until tender, about 5-7 minutes. Season with salt and pepper.

  5. 5

    Serve

Slice the grilled jerk chicken and serve it over a bed of mashed red potatoes, with steamed broccoli on the side.
