Main Ingredients

Aging Solution

Method

Preparation of Aging Solution

  1. 1

    Mix Aging Solution

In a large mixing bowl, combine water, sea salt, sugar, and herbs. Stir well until the salt and sugar are completely dissolved.

  2. 2

    Submerge Steaks

Place the ribeye steaks in a suitable container and pour the aging solution over them, ensuring they are fully submerged.

  3. 3

    Refrigerate

Cover the container with a lid or plastic wrap and place it in the refrigerator for 5-7 days to allow the steaks to wet age.

Cooking the Wet Aged Ribeye

  1. 4

    Prepare Steaks

Remove the ribeye steaks from the refrigerator and pat them dry with paper towels to remove excess moisture.

  2. 5

    Season Steaks

Season both sides of the ribeye steaks generously with kosher salt and black pepper.

  3. 6

    Heat Skillet

In a large skillet, heat olive oil over medium-high heat until it shimmers.

  4. 7

    Sear Steaks

Carefully place the seasoned ribeye steaks into the hot skillet. Sear for 4-5 minutes on one side until a crust forms.

  5. 8

    Cook Second Side

Flip the steaks and continue cooking for an additional 3-4 minutes for medium-rare doneness, or longer depending on preferred doneness.

  6. 9

    Rest Steaks

Remove the steaks from the skillet and let them rest on a cutting board for 5-10 minutes before slicing.

  7. 10

    Serve Steaks

Slice the ribeye steaks against the grain and serve immediately.
