    Prepare the Must

    In a large mixing bowl, crush the Viognier grapes gently with your hands or a potato masher to release their juices. This mixture is known as the must.

    Create the Sugar Solution

    In a saucepan, combine the sugar and water. Heat over medium heat until the sugar is fully dissolved. Allow to cool before adding to the must.

    Combine Ingredients

    Once the sugar solution has cooled, pour it into the bowl with the grape must. Add the lemon juice and stir gently to combine.

    Add Yeast

    Sprinkle the yeast over the surface of the mixture. Do not stir; let it sit for about 10 minutes to activate.

    Fermentation Process

    Transfer the mixture to a fermentation vessel, ensuring it is not more than two-thirds full. Add oak chips for added flavor. Seal the vessel with an airlock and place it in a dark, cool area.

    Monitor Fermentation

    Allow the wine to ferment for 1-2 weeks, monitoring the bubbles in the airlock. Once bubbling has slowed significantly, it's time to rack the wine.

    Rack the Wine

    Carefully siphon the wine off the sediment into a clean carboy or glass jug, leaving the sediment behind. Seal and let it age for 2-6 months.

    Bottling

    Once the wine has aged, it’s time to bottle. Sanitize your bottles and corks. Siphon the wine into bottles, leaving a little space at the top, and cork them.

    Enjoy your Viognier!

    Store the bottles upright for a few days, then on their sides. Chill before serving and enjoy your homemade Viognier!
