Roast the Prime Rib
Place the seasoned prime rib on the grill over indirect heat. Cook for about 15-20 minutes per pound, or until the internal temperature reaches 130°F for medium-rare. Turn occasionally for even cooking.

Rest the Meat
Once cooked, remove the prime rib from the grill and cover it loosely with aluminum foil. Allow it to rest for at least 20 minutes to let the juices redistribute.

Prepare the Serving Plate
While the meat is resting, prepare a serving platter with a bed of fresh arugula. This will serve as a fresh base for the prime rib.

Carve and Serve
After resting, carve the prime rib to your desired thickness and arrange it over the arugula. Serve with horseradish cream and au jus on the side for dipping.
