Steak Tartare

White Miso Mayo

Crostini

Method

Steak Tartare

  1. 1

    Prepare the Beef

Finely dice the beef tenderloin using a sharp knife to ensure even pieces. Place the diced beef in a mixing bowl.

  2. 2

    Add Flavorings

Finely chop the capers and shallot. Add them to the bowl with the beef. Stir in the Dijon mustard, Worcestershire sauce, and the egg yolk.

  3. 3

    Season

Season the mixture with salt and black pepper to taste. Mix well until all ingredients are thoroughly combined. Set aside.

White Miso Mayo

  1. 4

    Combine Ingredients

In a small bowl, combine the mayonnaise, white miso paste, and lemon juice.

  2. 5

    Whisk Together

Whisk the mixture until smooth and creamy. Adjust seasoning if needed.

Crostini

  1. 6

    Prepare Baguette

Slice the baguette into thin slices, about 1/2 inch thick.

  2. 7

    Toast the Slices

Preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet. Brush each side lightly with olive oil and sprinkle with salt.

  3. 8

    Bake

Bake in the preheated oven for about 5-7 minutes, or until golden and crispy. Remove from the oven and let cool.
