Prepare the Base
In a large pitcher, combine the Aligote wine, fresh lemon juice, and honey. Stir well until the honey is completely dissolved.

Gently muddle the fresh mint leaves at the bottom of the pitcher to release their aroma and flavor. Be careful not to over-muddle, as this can make the mint taste bitter.
