    Prepare the Marinade

    In a small bowl, combine the soy sauce, mirin, rice vinegar, sesame oil, grated fresh ginger, and minced garlic. Mix well to create the marinade.

    Marinate the Steak

    Place the 10 oz Wagyu strip steak in a shallow dish and pour the marinade over it. Cover and marinate in the refrigerator for at least 30 minutes, up to 2 hours.

    Prepare the Grill or Pan

    Preheat a grill or cast-iron skillet over high heat until very hot. Lightly oil the grill grates or the skillet.

    Sear the Steak

    Remove the steak from the marinade and let excess marinade drip off. Season both sides with salt and black pepper. Sear the steak on the hot grill or skillet for about 1-2 minutes per side for medium-rare, adjusting time for your preferred doneness.

    Rest the Steak

    Once cooked to your liking, remove the steak from heat and let it rest for 5 minutes to allow the juices to redistribute.

    Slice and Serve

    Thinly slice the steak against the grain. Arrange on a serving plate and garnish with chopped scallions and sesame seeds. Serve with the leftover marinade as a dipping sauce.
