Method

Preparation of Marinade

  1. 1

    Make the Marinade

In a small bowl, combine olive oil, lemon juice, minced garlic, and chopped fresh dill. Mix well to create a marinade for the salmon.

  2. 2

    Marinate the Salmon

Place the salmon fillets in a shallow dish and pour the marinade over them. Ensure the salmon is well-coated. Cover and refrigerate for at least 30 minutes.

Preparation of Vegetables

  1. 3

    Prepare the Vegetables

Wash and slice the zucchini and bell pepper into thin strips. Trim the ends of the asparagus.

  2. 4

    Season the Vegetables

In a bowl, toss the sliced zucchini, bell pepper, and asparagus with olive oil, salt, and black pepper to taste.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it on the grill. Grill for about 4-5 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

  3. 7

    Grill the Vegetables

While the salmon is grilling, place the prepared vegetables on the grill. Grill for about 3-4 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 8

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the grilled seasonal vegetables.

  2. 9

    Garnish

Optionally, garnish with additional fresh dill or lemon wedges before serving.
