Prepare the Batter
In a medium bowl, whisk together the flour, baking powder, salt, and black pepper. Gradually add the cold sparkling water while whisking until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into thick strips to resemble fries.

Fry the Potatoes
Carefully add the potato strips to the hot oil in batches, frying for about 5-6 minutes until golden and crispy. Remove and drain on paper towels, sprinkling with salt immediately.
Tartar Sauce

Mix the Ingredients
In a small bowl, combine the mayonnaise, chopped dill pickles, capers, lemon juice, and optional fresh dill. Mix well until fully combined.

Refrigerate the tartar sauce for at least 30 minutes to let the flavors meld together.
