Cooking Instructions

  1. 1

    Prepare the Base

Heat the olive oil in a large paella pan or a wide skillet over medium heat. Add the chopped onion and sauté for 5-7 minutes until soft.

  2. 2

    Add Garlic and Peppers

Stir in the minced garlic and red bell pepper, cooking for an additional 2-3 minutes until fragrant.

  3. 3

    Incorporate Tomatoes and Spices

Add the diced tomatoes, saffron, and paprika. Cook for another 5 minutes, allowing the flavors to meld.

  4. 4

    Add Rice

Stir in the rice, ensuring it is well coated with the mixture. Cook for 2 minutes.

  5. 5

    Add Broth

Pour in the chicken broth and bring to a boil. Reduce heat to low and let it simmer for 15-20 minutes without stirring.

  6. 6

    Add Seafood and Chorizo

After the rice has absorbed most of the liquid, nestle the shrimp, mussels, and chorizo into the rice. Cover and cook for an additional 10 minutes until the seafood is cooked and mussels have opened.

  7. 7

    Finish and Garnish

Stir in frozen peas and cover for another 2 minutes. Remove from heat, garnish with chopped parsley, and serve with lemon wedges.
