Dough Preparation

Make the Dough
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and crack in the eggs. Add olive oil. Using a fork, beat the eggs and gradually incorporate the flour until a rough dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead it for about 10 minutes until it becomes smooth and elastic. Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Prepare the Filling
In a bowl, mix the ricotta cheese, cooked spinach, grated Parmesan cheese, and nutmeg. Season with salt and pepper to taste. Stir until well combined.

Roll Out the Dough
After resting, divide the dough into four portions. Roll out each portion on a floured surface to about 2mm thickness.

Cut and Fill
Cut the rolled dough into squares of about 10x10 cm. Place a tablespoon of filling in the center of each square. Fold the dough over to form a triangle and press the edges to seal.

Boil the Pighin
In a large pot, bring salted water to a boil. Drop the filled pighin into the water and cook for about 4-5 minutes, or until they float to the surface. Remove with a slotted spoon.
