Make the Cheese Sauce
Stir in the cheddar, monterey jack, fontina, parmesan, and goat cheese until fully melted and combined. Season with salt and black pepper to taste. Remove from heat and set aside.

Prepare the Lobster
In a skillet over medium heat, melt a little butter and add the shallot. Sauté for 2-3 minutes until translucent. Add the cognac, allowing it to cook off for about 1 minute. Stir in the lobster meat, diced tomato, and chopped chives, cooking for another 2-3 minutes until warmed through. Set aside.

Cook the Pasta
In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and return to the pot.
Combine and Serve

Combine All Components
Bake in a preheated oven at 350°F (175°C) for 15-20 minutes until bubbly and golden on top. Garnish with additional chives if desired and serve warm.
