Method
Prepare Chocolate Mixture
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir gently until completely melted and smooth. Remove from heat and let it cool slightly.
Combine Mixture
Once the chocolate and butter mixture has cooled slightly, set it aside to reach room temperature while you prepare the whipped cream.
Make Whipped Cream
Whip the Cream
In a large mixing bowl, add the heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form. Be careful not to over-whip, as it can turn into butter.
Fold in Chocolate
Gently fold a third of the whipped cream into the cooled chocolate mixture to lighten it. Then, carefully fold in the rest of the whipped cream until no white streaks remain, being cautious not to deflate the mixture.
Assemble and Serve
Chill the Mousse
Spoon the chocolate mousse into serving dishes or glasses. Cover and refrigerate for at least 2 hours, or until set.
Garnish and Serve
Before serving, top each mousse with fresh raspberries. Enjoy your classic chocolate mousse!
