Preheat the Oven

Preheat your oven to 400°F (200°C).

Mix Dry Ingredients

In a large bowl, combine cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk until well mixed.

Combine Wet Ingredients

In a separate bowl, whisk together milk, egg, and melted butter until well combined.

Pour the wet mixture into the dry ingredients. Stir until just combined. Do not overmix.

Bake the Cornbread

Pour the cornbread batter into a greased baking dish and bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick comes out clean.

In a medium saucepan over medium heat, combine fresh blueberries, sugar, lemon juice, cornstarch, and cinnamon.

Stir the mixture gently until the blueberries start to break down and the mixture begins to thicken, about 5-7 minutes. Remove from heat.

Assembly and Serving

Assemble the Cobbler

Once the cornbread is baked, remove it from the oven and let it cool slightly. Pour the warm blueberry filling over the cornbread.
