Pasta Preparation

Cook the Pasta
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Make the Roux
In a medium saucepan over medium heat, melt the unsalted butter. Once melted, add the all-purpose flour and whisk constantly for about 1 minute until a paste forms.

Add Milk
Gradually whisk in the milk, stirring continuously to prevent lumps. Continue to cook for about 5 minutes until the sauce thickens.

Add Cheese and Truffles
Remove the saucepan from heat and stir in the shredded Gruyere cheese until melted. Then add the black truffle peelings, salt, and black pepper. Mix until well combined.
Combining and Baking

Combine Pasta and Sauce
In a large mixing bowl, combine the drained pasta with the cheese sauce. Mix thoroughly until the pasta is evenly coated.

Prepare for Baking
Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish.

Add Toppings
Sprinkle the crumbled bacon, chopped chives, and garlic breadcrumbs evenly over the top of the mac and cheese.

Bake in the preheated oven for 20-25 minutes until the top is golden and crispy.
