    Cook the Meat

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion, minced garlic, and chopped bell pepper to the pot. Sauté for about 5 minutes until the vegetables are softened.

    Add the Spices and Tomatoes

    Stir in the chili powder, ground cumin, salt, and black pepper. Cook for an additional minute to toast the spices. Then, add the canned diced tomatoes (with their juice) to the pot.

    Add Beans and Broth

    Add the kidney beans, black beans, and beef broth to the pot. Bring the mixture to a boil, then reduce the heat to low.

    Simmer the Chili

    Cover the pot and let the chili simmer for about 30-40 minutes, stirring occasionally, until thickened and flavors meld.

Serving

    Prepare the Toppings

    While the chili is simmering, warm the tortillas in a skillet or microwave. Shred the aged cheddar cheese.

    Serve the Chili

    Ladle the chili into bowls and top each serving with shredded aged cheddar cheese and chopped cilantro. Serve with warm tortillas on the side.
