Chips

Method

Chips Preparation

  1. 1

    Cut the Tortillas

Cut each corn tortilla into 6 equal wedges to create chips.

  2. 2

    Heat the Oil

In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 3

    Fry the Chips

Carefully add the tortilla wedges to the hot oil in small batches. Fry until they turn golden brown and crispy, about 2-3 minutes per batch.

  4. 4

    Drain and Season

Remove chips from the oil and drain on paper towels. Season with salt while still hot.

Queso Blanco Preparation

  1. 5

    Melt the Cheese

In a medium saucepan over low heat, combine the white American cheese, Monterey Jack cheese, and milk. Stir continuously until melted and smooth.

  2. 6

    Add Seasonings

Once the cheese is melted, stir in the diced green chilies, garlic powder, onion powder, cumin, salt, and black pepper. Mix well until combined.

  3. 7

    Adjust Consistency

If the queso is too thick, add more milk a tablespoon at a time until the desired consistency is reached.

  4. 8

    Serve

Garnish with chopped cilantro if desired, and serve warm alongside your freshly made tortilla chips.
