Potato Preparation

1. Prepare the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

2. Soak the Potatoes

Place the cut potatoes in cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

3. Dry the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove moisture.

4. Heat the Oil

In a deep fryer or large pot, heat vegetable oil to 350°F (175°C).

5. Fry the Potatoes

Carefully add the dried potato strips to the hot oil in batches, frying until golden and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt while hot.

In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until lightly golden.

8. Add Cheese

Reduce heat to low and add the cheddar cheese and cream cheese. Stir until completely melted and smooth.

9. Season the Sauce

Add garlic powder, paprika, and black pepper, stirring to combine. Keep warm until serving.

Place a generous serving of hot fries on a plate. Drizzle with the cheese sauce.

11. Add Toppings

Top with sliced green onions, a dollop of sour cream, and bacon bits as desired.
