For the Coating
For Frying
For Assembly
Method
Marinating the Chicken
- 1
Prepare the Marinade
In a large bowl, combine buttermilk, hot sauce, salt, black pepper, garlic powder, onion powder, and paprika. Mix well.
- 2
Marinate the Chicken
Add the chicken thighs to the bowl, ensuring they are fully submerged in the marinade. Cover and refrigerate for at least 4 hours, preferably overnight.
Coating the Chicken
- 3
Prepare the Coating
In a separate bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika.
- 4
Coat the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the flour mixture, ensuring an even coating. Shake off excess flour.
Frying the Chicken
- 5
Heat the Oil
In a large, deep skillet or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 6
Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, making sure not to overcrowd the pan. Fry for about 5-7 minutes per side or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
- 7
Drain the Chicken
Once cooked, remove the chicken from the oil and place on a cooling rack or paper towels to drain excess oil.
Assembling the Sandwich
- 8
Prepare the Buns
Toast the burger buns lightly on the grill or in a toaster.
- 9
Assemble the Sandwich
Spread mayonnaise on the bottom half of each bun. Place a piece of fried chicken on top, followed by pickles and leafy greens. Top with the other half of the bun.
