    Combine Dry Ingredients

    In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, and salt until well combined.

    Mix Wet Ingredients

    In a separate bowl, mix the olive oil, water, and honey (or maple syrup) until the mixture is smooth and well blended.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too dry, add a little bit more water, one tablespoon at a time, until the dough is workable.

Cooking

    Knead the Dough

    Turn the dough out onto a lightly floured surface (using gluten-free flour) and knead gently for about 2-3 minutes until smooth.

    Divide the Dough

    Divide the dough into 4 equal portions. Roll each portion into a ball and then flatten it into a disc about 1/4 inch thick.

    Cook the Flatbreads

    Heat a skillet or griddle over medium-high heat. Cook each flatbread for about 2-3 minutes on each side or until golden brown and cooked through.

    Remove the flatbreads from the skillet and let them cool slightly before serving. Enjoy warm with dips, spreads, or as a side to your favorite dishes.
