    Prepare the Grits

    In a pot, bring 4 cups of water and 1 teaspoon of salt to a boil. Gradually add 1 cup of grits, stirring constantly to avoid lumps. Reduce heat to low and cook for about 20-25 minutes, stirring occasionally until creamy.

    Caramelize the Banana

    While the grits are cooking, slice the banana. In a skillet, melt 1 tablespoon of butter over medium heat. Add the banana slices and cook until caramelized, about 3-4 minutes. Stir into the grits once they are done cooking.

    Prepare the Shrimp

    In a bowl, toss the shrimp with 2 tablespoons of jerk seasoning. Heat 1 tablespoon of oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until cooked through and slightly charred.

    Fry the Plantains

    Slice the plantains diagonally into thick pieces. In a separate skillet, heat 1 tablespoon of oil over medium heat. Fry the plantain slices for about 2-3 minutes on each side until golden and crispy.

    Assemble the Dish

    To serve, spoon the caramelized banana grits onto a plate, top with jerk shrimp, and garnish with crispy plantains. Serve mango chutney on the side.
